Our Hamalakis olive oil has been produced from first class, fresh and healthy olives that we pick directly from the trees. The whole production cycle and all the phases, from the harvesting and milling to the bottling stage, take place in our farming establishment which fulfils the requirements for the high quality grade and has been inspected regularly by the certification office for biological products.
For thousands of years oil has been produced in the same way, the difference now is that the equipment is more modern and easier to use. Also understanding the right time to harvest the olives is a major factor in the quality of our oil. Before the olives turn from green to violet they are shaken from the tree, and in order to maintain their nutritional value we bring them immediately, without storage, direct to the oil factory where they are processed within 6 hours.
After we weed out the twigs and branches the olives are crushed, they go through rotating high-alloy steel wheels which crush them. The olive paste that comes out is separated from the pomace and other waste and thereafter it goes for centrifuging which produces the pure oil.
The whole production process takes place in environmentally friendly conditions. We don't use plastic tubes and the cans are produced from un-oxidized metal. Also during the disposal of the acidic olive waste we maintain ecological standards, meaning that the waste that comes out is bio-degradable.
