The common green olive called Koroneiki or Psiloelia has a very small fruit but a high oil content up to 27%, and from these kinds of olives you get a table oil of high quality.
The oil is cold extracted from the olives and after that it is worked carefully in a natural process. In this way we produce this unique pure olive oil with both perfect taste and aroma. Of course this is both unfiltered and has not been mixed with other kinds of oil, or chemical additives.
This cultivation process adheres to the strict requirements for organic farming (EU Regulation 2092/91) and is controlled regularly by the certification office for organic products

which is endorsed by the EU. When the olive oil is ready it is certified after a thorough chemical analysis, and is classified as the highest quality category. The official certification is attached with the order.
